Malibu Mini Cupcakes

If you know me well, you will know what my two favourite things are… Malibu and cupcakes!! YUM!! These bite-size treats areΒ the perfect combo of those two things and they are too good to not share to the world – so here it is!

Coconut Rum Vanilla Bean Mini Cupcakes

  • 1 cup caster sugar
  • 113g salted butter
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon coconut essence
  • contents of 1/2 vanilla bean
  • 1 1/2 cups standard flour
  • 1 teaspoon baking powder
  • 1/4 cup coconut milk
  • 1/4 cup shredded coconut
  • 1/4 cup coconut rum of choice (I used Malibu)

Method:

  1. Preheat oven to 176oc and prepare
  2. Cream butter, sugar, and eggs together until fluffy. Add vanilla essence, vanilla bean and coconut essence and mix until combined.
  3. Combine flour and baking powder in a separate bowl and stir to mix.
  4. Add half into the previous creamed mixture, mixing until just combined.
  5. Add the milk. Once mixed, add remaining dry ingredients. Fold in coconut rum and shredded coconut.
  6. Pour into cupcake tins and bake for 20-25 minutes. Let cool, then frost.

Malibu Buttercream Frosting:

  • 226g butter, softened
  • 680g powdered sugar
  • 1/3 cup coconut rum
  • 1 teaspoon vanilla essence

Cream butter with vanilla essence until smooth. Gradually add powdered sugar, and add coconut rum 1 teaspoon at a time until desired consistency is reached.
